Green Curry

Green curry or in Thai “Kang Kaew Wan” is one of the famous Thai foods apart from Tom Yum Koong and Pad Thai. Green curry is Thai food that originated in Thailand with the adaptation of Indian and Arab curry. You can use chicken, pork, or beef but not with seafood as the main meat and add vegetables such as pea eggplants, kaffir lime leaves, basil, and fresh chilies.

The main part is the green curry paste that is made from green chillies, pepper, galangal, lemon grass, kaffir lime skin, red onions, garlic, coriander root, etc. The thick sauce comes from coconut milk and the taste comes from sugar and fish sauce. There are many types of spices in this curry which are more in the spicy end.

Red Curry

Thai red curry or “Kang Ped” is one of the most common dishes for local food in Thailand. The red curry paste is mostly made from dried chili, galangal, lemon grass, red onion, coriander root, garlic, Kaffir lime, and shrimp paste (called Kapi in Thai). The main difference between green and red curry paste is green chili and dried red chili.

Thai red curry can be created in many dishes which are fish fried in a spicy red sauce (Chu Chi), Kang Ped and Panang curry, etc. Red curry paste for making Panang curry is kind of the same for Kang Ped but will not contain coriander seed and cumin balls then add more of coriander root and ground peanuts.

Yellow Curry

Thai yellow curry gets its yellow color mainly from yellow chilies and turmeric and the rest is from the base of spices for curry such as lemongrass and galangal, etc. One of the well-known yellow curries for Thai dishes is Thai Massaman Curry. This meal is influenced by Muslim food which Thai version will be slightly sweeter.
